Spanish rice with chorizo

I know, it has been a while, but I am back, after some renovation works at home and a busy time at work. There was no time for taking pictures or writing up recipes but that doesn't mean that there was no time for cooking and trying new recipes...

I hope you will like this tasty version of Spanish rice. A spicy, Southern side dish, great to go with any meat or fish dish. It is mainly the Spanish chorizo sausage bringing a rather Latin taste to this simple rice & vegetable mixture.
One of the first ingredients used while preparing this side dish was the sliced chorizo. I did not add any extra oil as the sausage when fried, even in a small quantity, releases a lot of excess oil.




Spanish rice with chorizo
4 servings

Ingredients:
1 yellow onion, diced
1/2 green pepper, diced
1 clove of garlic, crushed
50gr chorizo, sliced thinly
1 cup basmati rice
2,5 cups chicken broth, hot
2 tomatoes, diced, deseeded & skin removed
1 tsp cumin
1 tsp chilli powder
pepper and salt to taste
coriander for serving (optional)

1. In a frying pan on medium to high heat add onion, green pepper, garlic and chorizo and fry 3 to 4 min until onion becomes translucent
2. Remove vegetables & chorizo mixture from pan but leave oil, from chorizo, in frying pan
3. Add rice and fry during 3min
4. Bring the vegetable & chorizo mixture back to pan and stir in well with rice
5. Add chicken stock, tomatoes, cumin, chilli powder, pepper and salt and stir
6. Reduce heat to low and let rice mixture simmer, covered, during 20 to 25min


The Spanish rice is now ready to be served. Optional, sprinkle coriander on top of the rice to give it that special kick! Enjoy!
