Pineapple & strawberry 'charlotte'

We are in the midst of doing some renovation works at home. It gives me less time to experiment with some recipes, nevertheless we are still hungry and in the mood for some nice treats, that's why I have prepared this easy charlotte with pineapple and strawberry. I am not sure if there is an English word for 'charlotte'. But for sure it is the easiest cake you can make. No eggs nor flour and no baking time. Just some 'cool' time in the fridge. 

You do not even have to feel too guilty when cutting a big part of this cake, once it is ready because it is made with low fat cream cheese (used 0%). 
You do have special plastic molds for this cake, but even without this it is absolutely no problem. A normal bowl with a flat bottom will do the trick. After dipping the biscuits in the juice, they will become soggy and sweet and easily take the shape of the bowl.
This not too unhealthy treat will melt in your mouth offering a nice blend of cream cheese and fresh fruit with some well-integrated biscuits. 





Pineapple & strawberry 'charlotte'
6 to 8 servings

Ingredients :
±25 finger biscuits
25cl pineapple juice
8 slices of pineapple, canned or fresh, diced
5 strawberries, sliced
500gr low fat cream cheese, 0% (fromage blanc)

Needed: ± 7 inch bowl

1. In a deep plate, pour pineapple juice; soak finger biscuits in pineapple juice, one by one and place on bottom of bowl, next to each other before placing them upright, following the inside of the bowl
2. Once inside of bowl is 'reconstructed' with finger biscuits, place a layer of cream cheese
3. Followed by a layer of diced pineapple and sliced strawberries
4. Repeat step 2 and 3 once more and end with a layer of cream cheese
5. Soak remaining finger biscuits in pineapple juice and cover the top, until no cream cheese is visible anymore
6. Place some plastic wrap over the top and place a plate on top of the bowl and chill in the fridge for at least 5 to 6hrs for it to set well
7. Turn over the mold and let the charlotte slide on a plate
The charlotte is now ready to serve.
