Chicken & chickpeas in a spicy tomato sauce

When living in the South of France and going out for dinner or even eating at people's homes, it will make you realise that on the other side of the Mediterranean you will find North Africa with its oriental cuisine. Cumin is one of the herbs they use very often. I love it as it gives this 'something special' to any meal you make.

I have combined some simple ingredients to create a lovely meat dish which is best accompanied with some fried polenta, couscous or even just with white rice.
Chicken, chickpeas and tomatoes... with this trio you just can't go wrong! The ingredient list might look long but when checking out the steps you will realise that this is an easy but very tasty (slightly spicy) dish.





Chicken & chickpeas in a spicy tomato sauce
4 Servings

Ingredients:
1 onion, diced
1 tbsp olive oil
4 chicken breasts, cut in 1 inch cubes
2 cloves of garlic, crushed
salt and pepper to taste
1 tsp cumin
1/2 tsp red chilli flakes
400gr (1 1/2 cup) canned tomatoes, diced
1 glass chicken stock, hot
200gr (4/5 cup) chickpeas, drained and washed
1 tsp dried parsley

1. In a medium size skillet, heat olive oil over medium to high heat before adding diced onion, stir for 2 to 3min.
2. Add chicken, garlic, salt and pepper;stir well while letting the chicken brown slightly during 4min. 
3. Add cumin and chilli flakes and stir during 1min.
4. Add canned tomatoes, chicken stock, chick peas and parsley; stir well; let it simmer, with the lid on, on low to medium heat during 40min.
The dish is now ready to serve. Serve hot with fried polenta, couscous or white rice.
